北菇扒鴨掌

用料与制法:鴨掌,泡发香菇,菜胆,蒜头,姜片,生粉,料酒,上汤,麻油,盐,糖,黑酱油,味精,胡椒粉.将鴨掌洗净,用开水泡过,清水漂凉用黑酱油浸二小时捞干待用.菜胆蒸刚熟摆在盘四周.热油锅,用中火使油温,将鴨掌溜炸2分钟捞起备用.热油锅,爆香蒜,姜片.放冬菇炒香,料酒走边,下高汤滚,放鴨掌再下盐,糖,黑酱油,麻油,胡椒粉等味料小火焖一小吋,用生粉勾芡一起盛入菜胆盘中..此菜应用鹅掌,但找不到故用鸭掌代之. 4@7d#hf8AV*V!S
