1、花甲,又叫花蛤,买来时要先用淡盐水浸泡一晚,待其吐净沙子,才洗净下锅烹调;如果花甲未吐净沙子,吃起来会嗑牙。[i@IA~4z5pP?
2、花甲不可久炒,会失去鲜美清甜的口感,下锅煮至开壳捞起,回锅时与炒好的配料快速炒匀便可。
