麻辣香芹拌肚丝[8P]

新鲜猪肚用盐与面粉,或是淀粉反复搓洗,洗至闻不到臭味,锅里放大半锅水,放整棵蒜头,一小勺盐,姜,一大汤匙卤汁或是酱油,同洗净的猪肚一起煮。直至筷子能轻轻穿透猪肚,关火。我用小火煮了大概五十分钟左右。

把芹菜洗净,去叶,切段。芹菜滚盐水里淖一下,然后泡冰水。捞出,沥干,一定要沥干,不然拌的时候水份很多。,p#{+FH+hb!H0k

把猪肚与芹菜,切好的姜,蒜,葱,干辣椒拌在一起,同时放调味料,盐,味精,糖,胡椒粉.花椒粉,香油。当所有的佐料与调味料拌匀以后,装盘就成。如果拌得多,剩下的可以放在一个盖碗里放入冰箱当中。碗上一定要有一个盖,或是用保鲜膜,防止水份流失。第二天吃,清凉爽口,麻辣鲜香。

作者个菜的时间还真有点长,看来要想吃的话还真得有点耐心。

这个找个时间弄一下,不过使用新鲜辣椒的话辣味会过分单一,拿香脆的泡椒来搞是不是会好点?
