中秋快到自己动手《冰皮月饼》超赞[68P]

中秋快到了,当然中秋吃得最多的就是冰皮啦~买现成的很贵,自己做,成本就低很多很多~自己也跃跃欲试,
iMlp3r S'G 于是买了材料和模具就动手做。
ybD,O(R 用了两种方法来做,三种口味,发现用澄粉的那种方法,&G5W#{;^Uf(V_}2s
口感是比较好,而且很柔软,很滑很细腻,绿豆馅和奶黄馅
^m$F&U4L`{HY7@ [color=red]奶黄馅材料和做法:"X;K&C5n(K)n1gp
[/color]低粉45g 粟粉45g 吉士粉90g 砂糖160g 牛油45g
{%Z(T1U t'~-MHC^ 炼奶60ml 牛奶540g 鸡蛋90g(三个左右)
)?&Z`;Aq0D8H@ cF 1、将牛油隔水煮溶备用5~C,qE9]r h
2、炼奶、牛奶拌匀J X v%t3_r:Z Y
3、把粉类和砂糖混合,然后把蛋分三次加入jyX6f KR
4、加入(1)(2)拌匀,过筛一次Rf}m"u%Dzhl:T
5、把(4)入锅大火蒸15-20分钟至熟$` K-EU%V2^
6、蒸熟后放凉,然后搓滑即可#RC,jA"~e9D"t7eA
[color=red]绿豆馅材料和做法:[/color]
5J%e7s} l_a 去壳绿豆200g 砂糖100g 色拉油90ml:Ks)lu r&W
1、绿豆洗净,加适量水入锅煮透3esb L[ L3@%@]
2、把煮透的绿豆用搅拌机搅成绿豆泥
nw9CIK C-D^4X:O 3、把绿豆泥倒入锅中分次加入砂糖,分次加入色拉油,小火炒干即可:X;n K#`tA^Z

aS AQ HC:w [/color]糯米粉120g 粘米粉120g 面粉60g 砂糖95g
3y8WlSpar QO r],V.a 牛奶475ml 炼奶5汤匙 色拉油4汤匙 可可粉8g
O5J6?X uJ;F q 1、所有粉类加砂糖混合
h5Zd3}]Vno G }*|t 2、牛奶加炼奶拌匀,倒入粉中搅拌均匀
'?{+VqqHY 3、加入色拉油,过筛一次(我过了两次)*{&ko/Nv s T"J it
4、入锅大火蒸30分钟至熟,待凉搓匀备用
#A*_#xqkH)e%f [color=red]冰皮材料和做法二(原味的做法一样,去掉绿茶粉即可):[/color]

炼奶油80g 牛奶400g 色拉油60g 绿茶粉8g
HV%QUy 1、牛奶、砂糖、炼奶、色拉油混合拌匀I9A}3f] d,EPz7e
2、所有粉类混合,加入(1)搅拌均匀9o Ch'|{Q B.E5W
3、搅拌好的面糊静置30分钟后入锅大火蒸30分钟至熟fng6I(rS{TS

$e9E6\?6B%W,j 1、冰皮冷却后,把冰皮分成25克的小挤子压扁(这个克数是用果冻模的,如果
A `H+D:u#yoGn 用月饼模一个小挤子大概30克左右),放入馅料,包紧、收口、搓圆,在手上拍,x(^t#?B W ~%FR$a@
点糕粉防粘
q;Pl-@*],yg 2、在模具里撒一点糕粉,让糕粉均匀粘在模上壁上,以方便脱模,然后把包好的Z&Wju+y#a
冰皮面团放进模具用手掌压实$W"X2Pwc5@gM
3、把月饼用力磕一下,再倒出来,就完成了
