还有N多N多的辅料。。OMG 。。 偶大都不认识,不过一般市场上都买的到, 在家里如果不这么繁琐的话可以用十三香代替。其实还有最重要的一个原料就是红油,那个可谓是慢工出细活,据说是要抄3 到4个小时呢

原来切鸡大有讲究啊,,以前一直以为,就直接切小就好了。。原来还和中医的筋络啥的联系。

用姜 50g, 要沿着姜的筋络切片,这样更有利于姜汁的渗出;还有大葱50g、,拍一下。便于渗出汁液。然后在里面放入盐 少许,老抽少许,料酒100g 以及酒酿(要的是酒酿里面憋出来的酒酿汁), 然后用力捏这些,捏大概2-3分钟左右,然后把这些捏出来的汁水倒入切好的鸡块中,然后捏鸡,使汁水能更好的渗入鸡块中Y,mA o&Z"HF
